Try this tasty fish with fruit salsa recipe:
200g white fresh fillets (hake, panga)
Salt and pepper for seasoning
60g red peppers, drained and diced
125ml pineapples, diced (fresh is best)
125g cocktail tomatoes, finally chopped
1 small onion, diced
1 small red chili, diced
60m chopped coriander
3tbsp lime or lemon juice
- Season the fish fillets with salt and pepper and pan fry until almost cooked through.
- Set fish aside to rest
- Toss the salsa ingredients together and season well
*Serve the fish with green salad, sweet potato and salsa
